Coffee Bavarian Cream
1 ½ tablespoons unflavored gelatin ½ cup cold milk 3 egg yolks ½ cup sugar 1/8 teaspoon salt 1 ½ cups strong coffee 1 teaspoon vanilla ½ pint cream, whipped
Soak gelatin in cold milk for 5 minutes. Beat yolks, sugar and salt together until light. Add coffee and mix thoroughly. Cook in double boiler over hot water, stirring constantly until mixture coats a metal spoon. Add gelatin. Stir until dissolved. Set in a pan of cold water and stir until it begins to thicken. Add vanilla and fold in whipped cream. Turn into a mold which has been dipped in cold water. Chill until firm. Serves 6.
