Coffee Blanc Mange

(pronounced ble monz or ble mandz)

 

½ cup sugar

3 tablespoons cornstarch

3 tablespoons flour

¼ teaspoon salt

1 ½ cups scalded mild

1 ½ cups strong coffee

2 beaten egg yolks

1 teaspoon vanilla

2 egg whites, stiffly beaten

 

Mix sugar, cornstarch, floor and salt. Add milk and coffee and mix well. Cook over boiling water until thick, stirring constantly. Cover and cook 15 minutes longer. Remove from heat, pour on the yolks and cook 2 minutes longer over boiling water, stirring constantly. Add vanilla. Fold in stiffly beaten egg whites. Pour into a mold or individual molds. Chill. Top with a drizzle of chocolate sauce if desired.
