COFFEE RUBBED STEAKS

2 - 16oz strip steaks

2 tablespoons steak seasoning (your choice)

1 tablespoon chili powder

1 tablespoon finely ground dark roast coffee

Rub steaks evenly with steak seasoning, chili powder and coffee. Using a cast iron skillet, place over high heat. Add 1 tablespoon oil in to the skillet. Spread the oil with a folded paper towel and spread to cover the bottom. Add the steaks and cook 4 minutes per side. Turn off heat and place aluminum foil loosely over skillet. Let the steaks rest for 10 minutes, turning them over at 5 minutes.
